11/09/2006 Organic bread made the right whey To celebrate both Scottish Food Fortnight and Organic Fortnight which run consecutively from 2nd - 17th September, a new organic bread has been added to the growing range produced by artisan bread makers, Crannach Bakery, using the whey from Torphins based cheese making business, The Craigmyle Cheese Company. The Craigmyle soda bread has been created to a traditional Irish recipe that uses buttermilk or whey to produce bread as it would have been made many years ago. "Soda bread came about in 19th century Ireland when yeast was not widely available and probably prohibitively expensive" explained Doug Cookson, owner and chief bread maker at Crannach in Ballater, "It was relatively easy to make in a simple kitchen and, originally, made use of whey which was a by product of cheese making. Having a new cheese maker just down the road, it seemed natural to take advantage of the whey that they are producing." Liz Marchant, of The Craigmyle Cheese Company added: "We are delighted that Doug can make use of our whey and create such a tasty loaf. Whey is really nutritious and contains lots of protein which is why it is often used in powdered form as a health supplement. To use whey as it was often used years ago is great and means there is less wastage for us." The Craigmyle soda bread is available from the Crannach stall at local farmers' markets and at the newly opened Crannach organic bread shop, 66 Claremont Street, Aberdeen.
